Oolong tea, hailing from China's Fujian province and the mountainsides of Taiwan, is a semi-oxidized tea. It undergoes meticulous processing using mature tea leaves. After withering for a few hours, the leaves are shaken to create small fractures in the cell walls, promoting oxidation. The oxidation process can extend for hours until the tea master deems it to be at the desired level. The leaves are then fired, rolled, and fired once more to form dark, twisted pellets, creating a distinct Oolong tea.
